I came across these opening lines in a section of the local papers which discusses food and its likes:

“Many young chefs who try to update traditional dishes end up being gimmicky instead. The reason is often that they lack a firm foundation in cooking, resulting in shaky ideas that are different just for the sake of being so.”

– Wong Ah Yoke (food critic, The Straits Times – Singapore)

Just to add on, the omission of the word “traditional” would also make the quote just as accurate. And since we’re on the subject of quotes, here’s another one:

“If it ain’t broke, don’t fix it.”
